Since joining the team as Head Chef in 2008, Nicholas Korceba has worked closely with owner and chef Shane Delia to bring you all your favourite Middle Eastern dishes. With an impressive career as a chef working at a number of Melbourne’s top restaurants including Jacques Reymond, Nick brings to the team creativity and a passion to experiment.
Nick's favourite time of the year is the change in seasons when he can play with new seasonal ingredients and create new dishes for the Maha menu.
“For me, experimentation is the favourite part of my job, from the first idea, to the thought process and mixing of flavours and spices. There’s a huge amount of satisfaction when people really enjoy something that I’ve created from start to finish.”
With a Slovenian and Ukrainian background, Nick's inspiration comes from his family, in particular his grandma, with his love and passion for food and cooking stemming from the time in his childhood spend preparing, cooking and learning from his grandma in the kitchen.
Nick's main source of motivation is his apprentices. Being able to teach and mentor his staff also brings a great deal of satisfaction as he is able to use his skill and talent to out something back into the industry.
